Any cook worth his or her salt, knows that cast iron is far better than most other cookware in so many ways.

If you’re using any other type of pots and pans in your kitchen, try just one good cast iron skillet. This simple step should be enough to convince you that there are so many benefits to using cast iron in your kitchen!

3 Main Benefits of Cast Iron Cookware

If you’re considering trying cast iron, or if you have some cast iron cookware that you are not currently using, here are some things to think about.

Cast iron distributes heat uniformly. When you cook with cast iron, the “hot” and “cold” spots found on thin aluminum or stainless steel pots are gone.

Cast iron retains its heat. You’ll really appreciate the way your cast iron retains the heat, even after removing it from the heat source. Great to serve from because your food stays hot longer!

Cast iron will outlive other cookware. Quality cast iron cookware will outlast you! There’s a good chance your grandchildren will pass it on to their kids. Well cared for cast iron will last for generations.

How to care for your cast iron cookware

Whether you inherit cast iron cookware or buy it new, a few simple pointers will ensure your cookware serves you well now and can be passed on to the next generation.

Season it!

Well seasoned cast iron is the best “non-stick” cookware you could hope for! And it’s really very simple. If you have new cast iron that is not preseasoned (much of it now comes seasonsed) or you have old cast iron that needs “renewal”, here are the steps to create a long-lasting, non-stick cooking surface:

Begin with ” clean” cookware. In this case, clean means free of any coasting that may have been applied by the manufacturer. If you have old cast iron, ensure it is free of rust. A palm sander with a medium grit disk is ideal for cleaning the surface.

Use lard to season your cast iron. Using enough to generously cover the surface, place the pan in the oven at 275°F to 300°F and bake for a couple of hours. Then pour off the excess lard. After the pan cools, wipe it clean with a paper towel. Repeat this process one or two times for best results. It’s best initially to use the pan for some oil or fat dishes after seasoning.

After each use, let it cool then simply wipe it with a paper towel, or, if some food has stuck to the pan, soak it for a few minutes, then wipe the pan. Never use detergent or scouring pads as this will damage the seasoned surface.

If you don’t anticipate using your cast iron for a long period of time, wipe it with a thin coat of a stable oil such as olive oil to help keep moisture, and therefore rust, at bay.

One word of caution: because cast iron is such a good conductor of heat, handles get extremely hot. Keep some good oven mitts handy and be sure to use them!

Certain materials are more inert than others. This means the pots you use to cook with can interact with the food you make. Traces of metals can make their way into your food.

This is not so important for adults. For babies and small children it can be a risk to health. Experts are divided on exactly what the effects are. The biggest risks are attached to those who are allergic to certain metals. And babies can’t always tell you what has given them a stomachache or that unsightly rash.

When your cooking pots are shiny and new, there is no risk. As soon as they begin to get chipped, the metals they are made of can get into your food. Here are some tips from the experts to help you avoid any health risks:

- Avoid using copper pots that are not lined or insulated to prepare your baby’s food. Copper can break down folic acid and vitamins C and E once it is heated to a high enough temperature. Many food items are acidic, particularly pickled food and rich sauces that contain vinegar. Acidic foods break down the copper in your pots – and this is deposited in your food.

- Tiny amounts of aluminium can get into your baby’s food if you heat up something acidic in an aluminium pot. A safer alternative is anodized aluminium cookware which prevents any aluminium getting into your food.

- Pots made of stainless steel are much safer because they don’t react with food despite being made of a mixture of different metals. But you’d be better off not using them to prepare baby food if the pots are old – especially if they are dented or chipped.

- You should avoid cooking your baby’s food in non-stick pans because the non-stick coating may chip off and end up in the food. It is also believed that toxic fumes can be released by heating a non-stick pan to a very high temperature.

In general, scrubbing your stainless steel cookware with an abrasive substance such as wire wool is not a great idea. As well as scratching your pots, it releases small quantities of of nickel and chromium into your food.

It’s not all bad news, though. Cooking with iron cooking pots can benefit your health. When you cook acidic foods such as tomatoes in iron, the foods actually “pull” the iron from the pot. This can raise the amount of iron in your food, which is essential for a healthy diet.

The FDA’s Center for Food Safety and Applied Nutrition say that ceramic, glass and enameled cookware is safe. They recommend not using older enameled cookware because it may contain cadmium. Cadmium is toxic and is no longer used in the manufacture of cookware in the US.

Would you expect the top chefs to use low or high quality cooking equipment? My bet is you answered ‘high’ quality. And you’d be right. Many TV chefs use their familiar faces to market and sell their own brand of cooking equipment. Jamie Oliver springs to mind straight away. And you wouldn’t be far off the mark in thinking that Jamie’s own brand of cooking equipment is top quality.

His cooking equipment has to be of the highest quality. He has his own brand identity. He sells his shows, his recipes, his cooking style through the quality of what he produces. So the quality of his cooking equipment has to match the quality of the rest of his brand. Chances are, you wouldn’t think much of your Jamie Oliver deep frying pan if the handle came off while you were following Jamie’s show, frying up the perfect English breakfast.

Right, that’s enough about celebrity chefs. Because their livelihood relies on cooking food, the cooking equipment they use is going to be top draw gear. How about the rest of us? Is there a significant difference between the best quality and the cheapest cooking equipment? Does the law of diminishing returns apply to kitchenware?

The short answer is: cook a lot? Then buy the best. Good cooking equipment lasts a lifetime. It’s something you forge a relationship with. Your tools are your cooking pots. They can become an extension of your body, even of your self. for example, a good quality iron frying pan will never let you down. It is a heavy piece of equipment. It’s solid. You really feel it’s power every time you wield it. And there’s research to suggest that cooking slightly acidic foods such as tomatoes in ironware will have a beneficial effect on your health. Contributing to your daily iron intake, traces of iron are released into your food.

On the other hand, cheap cooking equipment is very likely to let you down.

The average consumers do not have bottomless wallets. They live within a budget. Perhaps they occasionally splurge on that special item but, for the most part, are somewhat conservative with their hard-earned dollars. It is not always in the best interest to buy a single sauce pan for hundreds of dollars. Is cheap the best way to go on all things — especially cookware that is used repeatedly?

There is a temptation, especially when short on money, to shop for cookware at discount dollar stores. This would not be a good idea for one simple reason: return on investment. Cheap pots and pans are just that…manufactured as cheaply as possible. Take for example a five dollar coated baking sheet. It will work great the first few times it is used. The cookies, pizza or whatever is being prepared will not stick and it will be easy clean up. However, the coating wears off very quickly and soon the sheet metal beneath is exposed and rusts. Those cookies might be chocolate chip but a rusty after-taste is probably not going to be a big hit at the office party.

Now it becomes a matter of mathematics. Factor in the initial cost of the pan with how many times it can be used, and consider the cost of a replacement pan; you’ll find that the cheaper pan may not be the bargain it was initially thought to be. This applies to any cookware that is purchased — with the notable exception of auctions or discount restaurant supply stores. It takes an observant eye to understand the difference between a bargain and just plain cheap. Remember: “bargain” saves money and still offers a valuable commodity, whereas “cheap” saves money but the quality is not made to last.

If money is an issue and cheap cookware becomes the only option available then go ahead and make the purchase. Just plan on replacing the cookware relatively soon; or better yet, go ahead and begin saving up to purchase quality cookware one piece at a time. As an educated consumer, make sure to shop around. Friends or family are great sources of information and can suggest cookware they themselves have or like. Good quality cookware is an investment. When taken care of properly, it will last a long time and be quite rewarding.

Once upon a time, there was silicon rubber for the boots on spark plugs. It was a great insulator from heat and took a wide range of abuse from the engine. Several years later, innovators wondered, “If it’s so great in engines, wouldn’t it give the same impressive results in bake ware?” So it was with much research and ingenuity that the first set of brightly-colored silicon cookware was born.

As the name implies, silicon cookware is made with silica. It is heat resistant and very flexible. Silicon bake ware is very new on the market. It first started showing up on infomercials before making its way into more mainstream stores and supermarkets. The appeal is that it’s very flexible, has even cooking and is completely non-stick. Even if the chef forgets to use a non-stick spray, food does not stick to the silicon bake ware. This is a huge appeal for any chef. Nothing sticks and even if it does, the pan is so flexible that it can turn right side out to remove the offending piece of food.

One of the concerns regarding silicon bake ware is whether or not it retains its shape. Its flexibility is a marketing plus, but some worry that bundt pans cannot retain their rigidity when filled with heavy batter. Having to clean up a major spill in a hot oven is not a good time. Surprisingly, the silicon pan stays upright with no spillage — even holding something as heavy as cake batter. The cake browns evenly on all sides and is moist in the middle. Once again, clean up is a snap, even without the use of grease or non-stick cooking spray.

The one thing the silicon bake ware cannot do is make anyone a world class chef. The commercials and advertisements make it seem this way; but it just means that whatever concoction is baked, slides right out. It can still taste terrible, but at least the bake ware remains durable. The bright colors of the silicon bake ware are also very appealing and make searching for a pan in a dark cabinet very easy. Most silicon bake ware sets come with hot mats and utensils, which are added bonuses. Regardless of how your first silicon bake ware set comes, the advantages over traditional pans are tremendous. Easy to use, non-stick and flexible are some of the great selling points when considering silicon.
The smooth surface is not a functional item, but rather an aesthetic item. Stoves come in a range of colors and designs. Many homeowners will try to match the same brands, colors and styles when replacing their home cooking equipment.

Microwaves and dishwashers are another popular home cooking equipment.

Convection oven cooking equipment have been used in restaurants and bakeries for years. Many avid bakers insist on having a convection oven in their homes as well. The convection oven is different from a regular oven and has been noted for its efficiency and quick cooking time. Convection oven cooking equipment should be considered for any residential or commercial use in need of a new oven.

The cooking results obtained with the Convection oven is superior in quality and can not be surpassed by the regular oven. Convection oven cooking equipment is used for the ease, quickness and quality of the food produced. The convection oven works by using a small fan that circulates the heat produced within the oven. This keeps the warm air from pooling at the top of the oven and cooking at a faster rate. This is why your pizza burns on top, but the middle is still cold in the regular oven! With the movement of the warm air, the food is allowed to cook more evenly and reducing the risk of burning or not being cooked in the middle.

There are many different types of convection ovens. Some range from tabletop toasters that can be used as both cooking types. These oven designs consist of a switch that can be used to determine the cooking style. This makes it very convenient for the chef that needs different cooking methods for different dishes. The commercial stainless steel convection ovens are built for durability and repeated use. They are aesthetically pleasing in a residential kitchen and can be purchased in a variety of colors. So, don’t worry it can match!

The convection oven cooking equipment is more energy efficient then the regular types of ovens. It takes less heat because of the circulation and the moving air is easier to heat then still air. The circulation of heat is excellent for cookies, pies and cakes. With a convection oven, you will not have to worry about an uneven cook. If you do a lot of baking, the reduction can be noted on the electric bill. Any type of savings on the electric bill is always a welcomed issue.

Convection oven cooking equipment is typically used for baking goodies, pizza and a variety of other foods. The result is delicious and the food has a crisp, but not burned outer layer. Convection ovens are not a great deal more expensive then the regular ovens, but it certainly pays to spend the additional up front to save the energy costs over a period of time.
