BAKED TOMATOES
INGREDIENTS: For 3 people, you need 4 or 5 tomatoes, pepper and salt to taste, a knob of butter and some bread crumbs (from a packet is fine, if you don’t have any fresh).
Method: Slice the tomatoes (removing any stalks) and put them in a deep baking dish. Season with the salt and pepper and dot them with most of the butter. Cover them with the bread crumbs and dot the rest of the butter on top (or melt it gently and drizzle it over the top). Bake in a moderate oven for 20 – 30 minutes. Serve piping hot. This is a great and more unusual vegetable to serve with any meal, especially meat or fish but also goes well with basically anything.
